Every time I mention that I'm on  Atkins, someone flips out and acts like my liver is going to  explode. It drives me crazy,  because they  usually think I live on processed meats and  never eat a vegetable. They couldn't be more wrong. What do you think is replacing all the starches? Meat with a side of meat? That would get boring almost immediately.

1. I eat  vegetables at almost every meal -  even breakfast.  Eggs and spinach are a really yummy combination.  Not  a spinach fan ? Poor you! Here's an alternative. In Israel,  most  breakfasts I saw  included a salad of tomatoes,cucumber and cilantro. It's amazing and pretty habit-forming. Plus it's easy  to make ahead of time and take along  to  work or eat  when you're in a rush.
-UPDATE : Jamie Oliver has a video  of  asparagus  roasted with bacon wrapped around it. A couple of runny-yolked eggs that,over and it's INCREDIBLE!


2. Most potato dishes you're used to? For me it's cauliflower. Same goes with macaroni and cheese. Pasta usually gets swapped out for broccoli. Since I  I've heard  you can grate up cauliflower  and use it for rice too.Never done that, because it seems like a lot of work -I'd rather just roast it  or  blend it  for "cream"  soups

3. I still eat some starchy things that  are worth the carbs/ calories. I love pumpkin and use it in a dozen different things- even protein shakes. 

4.I even eat some fruits. During the summer, I eat an entire basket of amazing locally grown strawberries almost every day. The whole thing is 90 calories-  Sure beats a sad little 100 cal  pack  of crappy cookies. Winter time I settle for  frozen, but they're great thawed out just a little.

Ok  with that said, this  means I'm  replacing  carbs with  vegetables. Sooooo....  the logic is I'm eating more vegetables - I thought that was supposed to be a  good thing?

-update- Since I started this round of Atkins, Iearned  how amazing swiss chard can be. I sautee 2 bunches of with italian sausage, and when it cooks down I throw a jar of Sugar free pasta sauce on it, the spicier the better.Top that with some good  parmesean, and it blows Olive Garden out of the water!
